Food Network contestant Maddie Carlos opening macaron shop at Mall of America

Maddie Carlos, who already has a bakery in Coon Rapids, appeared in “Holiday Baking Championship.”

Only 22 years old, Maddie Carlos – aka Maddie Lu – is moving up in the world fast.

Less than a year after appearing on the Food Network, Carlos – who already runs her own bakery in Anoka County – is opening up shop at the Mall of America.

It'll be called Macarons by Maddie Lu and open this fall, according to a news release received by GoMN.

As the name suggests, it'll be dedicated to that sweet mainstay of French cuisine, the macaron – which, in case you're not familiar, is a "meringue-based cookie" with "buttercream, ganache or fruit curd" filling.

The mall says guests can look forward to a range of "delectable, preservative free" flavors, including pistachio, Butterfinger, s’more, raspberry, caramel vanilla and others.

As MOA notes, Carlos opened her first bakery, Something Sweet by Maddie Lu in Coon Rapids, as a business venture with her mom in 2015. She followed that up by competing on Food Network's Holiday Baking Championship, where she "placed in the top two in the first round."

There's no firm opening date for her Mall of America store yet, other than "late this fall" (per a Facebook update from Carlos).

Macarons by Maddie Lu will be on the mall's first floor near Macy's. 

By the way, as PopSugar notes, there's a world of difference between macarons and macaroons, though there's understandably a fair amount of confusion due to their similar names.

"Macaroons" (with emphasis on the "roon" at the end, if you're wondering about the difference in pronunciation) are those "haystacks" of dried coconut that get spooned out onto a baking sheet à la cookies.
