Look at all the new food coming to the Minnesota State Fair


Here's a selection of pictures that's going to get your appetite so whet, you may need to put a towel down.

It's that time of the year again when the Minnesota State Fair starts your salivating two months early, because it's released its list of 32 new foods hitting the stalls at this year's fair.

Some of this year's offerings have a distinct Minnesota flavor – not least the "SPAM Sushi" that will be on sale at Sushi Rolls near the Warner Colosseum and the cheesed-flavored "SPAM Curds" at the "SPAM" stall.

Other new entries include a "sheep dog," a lamb hot dog concoction from The Lamb Shoppe that comes with sautéed kale, sauerkraut and quinoa (which we thus dub the "hipster hot dog"); and a mouth watering strawberry glazed delight (donut sliced in half, filled with strawberries and cream) from The Strawberry Patch.

The fair opens on Aug. 25 and runs through Labor Day on Sept. 5. Organizers are hoping to top the almost 1.8 million people who attended last year.

Here are some of the other new dishes on offer:

Gumbo Frites at Ragin Cajun

Fries topped with New Orleans sausage gumbo, finished off with cheese and green onions.

Iron Range Meat and Potatoes at Giggles' Campfire Grill

Seasoned beef topped with cheddar, mash and wild rice gravy.

Paneer on a Spear at Hot Indian

Deep-fried Indian seasoned paneer cheese coated in local craft beer batter.

Cajun Peel-n-Eat Shrimp at Cafe Caribe.

A half-pound of shrimp seasoned in Caribbean spices. Served with cocktail sauce.

Call it Breakfast at the Dairy Goodness Bar

Vanilla malt or sundae topped with chunks of donuts, drizzled with chocolate or latte syrup.

Chocolate Agate Crunch at Hamline Church Dining Hall

Izzy's chocolate Caramella ice cream, salted caramel swirl, cookie crumbles and edible chocolate rocks inspired by the Lake Superior Agate.

Carpe Diem at The Rabbit Hole

A Taiyaki (fish-shaped) buttermilk miso waffle cone filled with balsamic-roasted strawberry compote and topped with vanilla ice cream, graham cracker crumble and a fresh strawberry.
