Minnesota's second Portillo's opens in January – and the chain is still looking to expand

A second location opens in January, and the chain is planning more.

Portillo's hasn't even opened its second Minnesota location yet, and it's already planning more.

The Chicago chain – known for its Chicago dogs, Italian beef sandwiches and giant slices of cake – is eyeing a spot in Roseville, Business Journals reports.

This came out during a Planning Commission meeting the city held Wednesday, in which developers Hunter Developmet Group outlined plans for a Portillo's in a lot at the edge of the Rosedale Shopping Center property (County Road B2 and Fairview Avenue).

This isn't necessarily 100 percent done. The Planning Commission gave it preliminary approval, but it could still have to get the OK from further officials.

But it indicates the chain is still looking to expand in the Twin Cities area, as it gets ready to open its second location.

Portillo's debuted in Minnesota last July with a Woodbury location. A Maple Grove restaurant also got the go-ahead (though only after quite a bit of controversy) and is expected to open on Jan. 23.

An Apple Valley location was also reportedly being considered, but it's unclear where that stands.

Also, sometimes you get lucky and Spider-Man ends up taking your order, at least in Chicago.
