Modist Brewing tells us how it made this pink birthday beer

Hint: the pink comes from a prickly plant.

Modist Brewing in Minneapolis is celebrating its first birthday this weekend with a party – and a special beer.

At 11 a.m. Saturday, Modist will tap its first anniversary beer called Turbulent Juice (a name that may sound familiar to Rick and Morty fans). It's a "kettle sour, fruited milkshake IPA." Oh and it's pink.

The beer gets its pink coloring with the help of prickly pear, which is a cactus, Eric Paredes, Modist's co-founder, told GoMN. And to make the beer taste sour, fruity and creamy, Modist used a lot of different techniques for the first time. (More on the firsts below, if you want to get into the hardcore brewing stuff.)

How does it taste?

The beer is very refreshing and tastes a lot like grapefruit juice, even though there aren't any grapefruits in it. It's fruity and a little bit sour, but not overwhelmingly so. And despite being packed full of hops, the beer isn't too bitter.

Head brewer Keegan Knee said he's proud of Turbulent Juice, adding it tastes almost exactly as he imagined it would when he first thought of the beer, saying: "I took it from my head, and got it right there [pointing to my tulip glass of the beer] – and got it really, really close."

Knee said he learned a lot from making it, and he'll use the new techniques in "tons of different beers" going forward.

For the professionals' definition of the beer: Modist says Turbulent Juice is a "soft, tart, fruity, creamy IPA with a lot of tropical fruit aroma." It's 7.2 percent ABV, with 40 IBUs.

If you want to try it, you better get to Modist this weekend. Paredes said there isn't very much of it (probably less than 20 kegs), and he expects to blow through most of them on Saturday during the anniversary party. There will also be 150 crowlers of Turbulent Juice for sale.

All of the firsts

– It's their first kettle sour beer, and the first time they've fruit-fermented a beer (they used a bunch of mango and pineapple).

– It's the first time they haven't boiled the hops in a beer.

– It marks the first time they've dry hopped a beer at 5 pounds per barrel, which is "absolutely ridiculous" Knee said. On average, there are about 1.5-2 pounds of hops in an IPA.

– It's the first time they've used Mosaic hops in a brew. There are other hops, too, including Ella, Equinox and Denali, which all help contribute to the citrusy flavor.

– It's the first time they've used milk sugar and vanilla in a full-out beer (they've used it before in infusions). This is what gives the beer the creamy feel and flavor, reminiscent of ice cream or a milkshake.
