Rustica calls it quits at Mall of America

The cookies and ice cream experiment failed to take off.

Rustica Bakery's experiment at the Mall of America has come to an end after less than eight months.

The Minneapolis bakery, which also has an outlet in Eden Prairie and is planning another in Wayzata, opened Rustica Cookies and Creamery on the megamall's first level this past October.

But on Monday, company owner Greg Hoyt confirmed to the Business Journal that the Rustica cookies and ice cream outlet had closed its doors.

He told the magazine that business was at around 70 percent of its projected revenue, thinking it was the "right concept at the wrong time" for the north wing of the mall. Rustica had been across from Zara

WCCO's food reporter Jason DeRusha confirmed the MOA outlet had closed, with the company said to be focusing on its current and upcoming bakeries.

The Star Tribune reported the Mall of America outlet focused on its trademark cookies and "trendy soft-serve ice cream," with Rustica drafting in pastry chef Ben Spangler – who helped Milkjam Creamery get up and running – to run the ice cream half of the business.

The venue aimed to cater to the whims of on-the-go shoppers, offering counter service only and no seating.
