This year, GoMN producers will take turns explaining what they think the best part of the Minnesota State Fair is, and why. Up first is Declan Desmond and Giggles' Campfire Grill.
I've only been to the Great Minnesota Get-Together a few times (in fact, this year will be my fourth visit), but I already have a State Fair tradition: making a beeline, the minute I'm through the gates, to Giggles' Campfire Grill.
You've probably heard of some of their signature dishes, because they're among the most buzzworthy of the fair (which is saying quite a lot). It's where you can get things like walleye cakes and fries, s'more beer, and smoked salmon on a stick.
In case you didn't notice, Giggles' specializes in northwoods-inspired cuisine based on "fish and game" native to Minnesota, and in keeping with that theme, it operates out of a kitschy log-cabin style building on Cooper Street.
And you know that "new foods" list that the fair puts out every year? Giggles' is on it again, this time for "duck bacon wontons" and an exclusive "dill pickle ale." Needless to say, I'll be trying... oh, who am I kidding? I'll definitely be wolfing down both this year (though sipping that ale might take a little courage, admittedly).
Giggles' is a sacred ritual for my wife and I, and has been since I moved to Minnesota from California in 2014.
In fact, it's our breakfast every single year, and we get the same thing each time: Chicken-fried bacon (which, sadly, is not on the menu this year), the aforementioned s'more beer, and a helping of those delicious walleye cakes, too.
In short, Giggles' is the best part of the State Fair because they're exactly what the fair is all about: outrageous, larger-than-life, and delicious culinary creations that only come around once a year.
