After a successful first year of operation at Cooks of Crocus Hill in Minneapolis' North Loop, Bellecour Bakery is expanding to the retailer's St. Paul location.
The bakery, which opened as a pop-up at Cooks last summer after the pandemic forced the closure of the Bellecour restaurant in Wayzata, will open inside the Cooks of Crocus Hill on Grand Avenue next Thursday, Aug. 12.
It's the brainchild of Spoon & Stable owner Gavin Kaysen and award-winning pastry chef Diane Moua, who launched their bakery "shop-in-shop" concept in the North Loop Cooks last July as a pop-up, which turned permanent in September.
The St. Paul cookware store will from next week be home to a "spacious bakery counter and coffee station," featuring pastries and confections of Moua's design.
To launch the new location, the August special in the St. Paul store will be raspberry frangipane, which was a popular pick for diners at Bellecour's former Wayzata location.
