The Galaxy Drive-In in St. Louis Park reopened Monday as Clays Galaxy Drive-In.

The restaurant has been closed since 2015. The owner, Steve Schussler, had been waiting for the right moment to bring it back.

The middle of a pandemic might not seem like the perfect time to open a restaurant seeing as so many are closing, but drive-in restaurants have proven to be quite popular in recent months, especially before restaurants reopened to dine-in customers.

Schussler, who started Rainforest Cafe, still owns the business, but he's tasked Mark Saliterman, a real estate developer who owns Clays restaurant in Rockford, and Clays chef James Awe to head the revamped drive-in located at 3712 Quebec Ave. S in St. Louis Park, the Star Tribune said.

The restaurant will be open 11 a.m.-8 p.m. daily with an updated menu from the last time the drive-in served customers that includes items made in house from scratch, the drive-in's website notes.

On the menu you'll find nine different burgers, eight different styles of hot dogs, appetizers like cheese curds and boneless wings, there's also sandwiches, fish and chips, shakes, floats, fries and onion rings.
