Marvel Bar and Gyst Fermentation named among Esquire's 21 Best Bars of 2018

The Minneapolis venues impressed the magazine's reviewers.

Two bars in Minneapolis habe been named among Esquire Magazine's 21 best bars in America for 2018.

North Loop cocktail haven Marvel Bar and south Minneapolis gastropub GYST Fermentation Bar both rank among the nation's finest drinking establishments.

To feature among Esquire's top choices is quite the coup. You might remember the magazine named the former Nye's Polonaise as the best bar in America in 2006.

For Marvel Bar, the speakeasy hidden beneath The Bachelor Farmer restaurant, the Esquire reviewer wrote: "If you’re thirsty for true innovation ... Marvel awaits."

"The imagineers behind its bar seem to be forging a new path forward, one that makes way for the nuanced magic of how ingredients interact: nori paired with Laphroaig, and Bénédictine swished with salt.

"I had a bourbon Negroni that had somehow spent time marinating on a bed of charcoal. I expected an ashtray; I got a bonfire."

The bar has gone from strength to strength under the guidance of GM Peder Schweigert and drink-maker extraordinaires: Head Bartender Matthew Voss and Beverage Director Emeritus Pip Hanson. 

After the rankings were announced, Marvel co-owner Eric Dayton tweeted: "This has been a goal of the Marvel Bar team since day one and I’m so proud of them for achieving it."

As for GYST, the contemporary bar known for its wine cocktails and kombucha concoctions paired with charcuterie, there was praise for sister owners Ky and Mel Guse, the North Dakota natives who opened the Eat Street venue to acclaim in 2014.

"Putting the words fermentation and bar in the same name may seem like a redundancy, since all alcoholic beverages exist as the result of fermentation. But Gyst sisters Ky and Mel Guse nudge the idea a step further, devoting their entire enterprise to the funk of microbial transformation," Esquire writes. 

"Pickled eggs and midwestern cheeses tango with ciders, sour beers, and natural wines that promise to put you in a good mood while replenishing your microbiome."
