A new local business under construction in Grand Marais will soon establish the community's only bakery offering cakes, pastries, cookies, breads and more. 

Crosby Bakery, expected to open next year, will transition the local business from a commercial wholesale bakery to a full-service retail operation.

Hana Crosby, the baker/owner behind the business, currently makes all her creations inside a 250-square-foot corner of a century-old white church, where the Betsy Bowen Gallery is also located. 

But, the small space hasn't stopped Crosby from making a name for herself with her signature baked treats, such as the giant cookies sold at Java Moose and custom wedding cakes decorated to resemble birch bark. 

"We do everything from scratch," Crosby said. "If something has caramel in it, I make the caramel." 

Crosby, who grew up in Grand Marais and currently lives with her husband and two children a few miles up the Gunflint Trail, didn't growing up baking. 

"A box cake was as far as my family got for birthdays," she joked. 

Crosby began teaching herself how to bake cakes in high school. Later, while living on the West Coast, she starting selling handmade soaps and other goods at a local farmer's market. 

One item, her lemon bars, always sold out. 

Since Crosby's return to Grand Marais and the establishment of baking business, the lemon bars remain a customer favorite. Croissants and other pastries are another staple. 

Crosby Bakery is expected to be fully open by the summer of 2024, with a soft opening likely in late winter or early spring.

In addition to a wide array of baked goods, the business will provide a much-needed place to gather during the winter months. 

"In the winter time up here it can get pretty brutal on people to just sit in their houses," Crosby said. "We're very excited to provide a space for people."
