After working as a therapist for nine years, New Ulm resident Lindsay Schweiss wanted a sweet transition. 

“For years, I’ve been saying, New Ulm needs an ice cream shop downtown,” she said.

Seeking advice for how to open her own shop, she contacted Waconia restaurateurs Greg and Bria James. As it turned out, the husband and wife had already found a space downtown for a potential second location of their ice cream shop, The Main Scoop.

Instead, the three partnered to open MN EIS, which prides itself on super-premium ice cream from Madison-based The Chocolate Shop, treats like fudge and cookie dough and German specialties, such as spaghetteis and eiskaffee.

“New Ulm is a town that is very rich in its German heritage, and we really wanted to have that German flair as part of our ice cream shop,” Schweiss said.

Spaghetteis consists of vanilla ice cream in noodle shapes with a strawberry topping and white chocolate resembling parmesan cheese. Eiskaffees, or German iced coffees, are like a root beer float but with coffee, Schweiss said.

“Our slogan is, ‘It’s always Minnesota Nice at MN EIS,” Schweiss said. “I couldn't think of anything more joyful than running an ice cream shop.”

For now, the store is open at 50 percent capacity - 40 people - in compliance with state guidelines during the pandemic. Schweiss said she and her staff are maintaining social distancing, wearing masks and frequently sanitizing the shop.

“Besides the restrictions we’re working under, I honestly think it was a great time to open our doors,” Schweiss said. “People don't have as much to do this summer with a lot of things being cancelled. So I think at least to bring some normalcy to people’s summers, like you can at least go get ice cream.
