Popular Minneapolis ice cream makers expand to Stillwater

A Minneapolis food truck that opened its first brick-and-mortar store in Northeast is now expanding to Stillwater.

Minnesota Nice Cream opened its doors at 308 Chestnut Street East on Saturday, with the intention it will be open Friday to Sunday every weekend until Memorial Day.

It sounds like there was a last-minute scramble to get the Stillwater shop open in time, with the ice creamery noting on Instagram that as of Friday night "opening ... seemed near impossible" but managed it thanks to "3 hours of sleep, a great support team, and a heylll of a lot of luck."

Minnesota Nice Cream built a following in the Twin Cities after initially operating as a food truck, before moving into its first home at 807 Broadway Street NE in Minneapolis last spring.

It made its name for its spectacular soft-serve concoctions with a variety of quirky toppings.

For example, currently found on its menu is the "Cookie Monster," which is cookie dough, oreo and caramel ice cream that's topped with sprinkles and glitter, and the "Dirt 'N' Worms," comprising flavors of brownie, oreo, fudge, gummy worms, sprinkles, and glitter.

The Stillwater shop will be open from 3 p.m. to 10 p.m. on Fridays, 12 p.m. to 10 p.m. on Saturdays, and 12 p.m. to 8 p.m. on Sundays.
