Back by overwhelmingly popular demand.

The new vegan restaurant forced to close last month because it couldn't cope with customer numbers is open for business once more.

J. Selby's threw open its doors to customers on Wednesday for the first time since temporarily closing Apr. 21 – a move made so it could find the staff it needed to handle St. Paul's insatiable hunger for vegan food.

It announced its reopening with the following, very modest sign.

The restaurant at Victoria Street and Selby is open 11 a.m.-10 p.m. Monday through Thursday, and 11 a.m.-11 p.m. on Friday. It opens at 8 a.m. for breakfast on Saturday and Sunday.

Owner Matt Clayton told the Twin Cities Eater he had originally opened thinking they'd be serving 250-300 "discrete diners" every day, before adding: "It turned out we were serving 700-800."

After a frantic first week left them out of 10 menu items by lunchtime Friday, Clayton made the decision to close and regroup: tweaking the menu, turning the kitchen into a 24-hour operation and adding more than a dozen staff members.

The "plant-based restaurant" serves a wide range of vegan treats, including buffalo wings (made with cauliflower) and beet burgers. You can see the full menu here.
