Cheesecake on wheels: Twin Cities company raising funds to launch mobile shop

A local cheesecake company is going mobile.

St. Louis Park-based Muddy Paws Cheesecake Co. is hoping to expand its business with a cheesecake shop on wheels called Camp Cheesecake.

"It will be a cross between a food truck and an ice cream man," Muddy Paws founder Tami Cabrera told the Minneapolis-St. Paul Business Journal. "We're going to have pre-packaged cheesecake kept cold in a refrigerator, and then we'll just hand them out up and down residential streets."

But to get the plan rolling, Cabrera, who started Muddy Paws in 1993, needs some funding. She launched an Indiegogo fundraising campaign to raise $29,500 to pay for the cost of restoring a 1950s-style camper, the vehicle used to pull it, and city licenses so Muddy Paws can sell cheesecakes throughout the metro area, among other things.

Muddy Paws says because the cheesecakes are pre-packaged, the mobile dessert shop will be licensed to go almost anywhere, the Indiegogo page notes. The camper will offer 10 rotating cheesecake flavors daily, including vegan and gluten free options, as well as bottled drinks and perhaps packed food from other local venders.

If Muddy Paws meets its fundraising goal, it hopes to have Camp Cheesecake driving around the Twin Cities selling desserts by mid to late June, the Indiegogo page notes.

And if all goes well in the first year, Muddy Paws plans to make Camp Cheesecake a franchise, where people can buy their own camper to sell the cheesecakes, the Indiegogo page notes.

"We feel like the Twin Cities could have 50 of these," Cabrera told the Business Journal. "There are so many neighborhoods and special events, not to mention weddings."

The campaign, which launched April 8, has raised $3,350 so far.
