One of Stillwater's oldest houses could become a brewery

One of Stillwater's oldest structures could be home to a brewing company from the same era.

When St. Croix Brewing Company owners Tod and Madeline Fyten toured the Chestnut Street building they knew it was perfect.

"It's the oldest building in town, and it will house one of the three original breweries in the city," Tod Fyten told the Pioneer Press.

The building, which is known as the Brunswick House, was constructed in 1848 – about a decade before St. Croix Brewing was born.

The Fytens are planning a taproom and microbrewery at the house, where they'll brew beers that match the historic style of the building, the Pioneer Press notes.

“The tap room will be similar to pubs of the Old World, and in keeping with the historical roots of the St. Croix Brewery in Stillwater,” Madeline Fyten wrote in a letter to the planning commission. “We envision the brewery will serve as a place where tourists can treasure Stillwater’s history and charm, while locals feel they can drop in to catch up on the day’s news while enjoying a pint of our authentic ales and stouts.”

The Fytens, who own other breweries in Minnesota, told the Pioneer Press that Stillwater is on its way to becoming a destination for craft beer lovers and wine enthusiasts.

St. Croix Brewing will be the second brewery-taproom to open in downtown Stillwater within a year. Maple Island Brewing opened in September. The area is also home to Lift Bridge Brewing Company, Wolf Brewery, St. Croix Vineyards and Northern Vineyards.

The Fytens have requested a special use permit to operate the microbrewery and taproom, along with a merchandise store and eventually and outdoor beer garden at the Brunswick House, the Stillwater Current reported.

City staff is recommending the planning commission approve the plans when it takes up the proposal Wednesday.
