Queso fans, rejoice!
Chipotle is testing queso at its test kitchen in New York City.
You read that correctly. The popular burrito chain is testing something it once said it would never include on its menu. Look at all that cheese:
This is big news for a bunch of people who love melty, gooey cheese, but haven't been able to get it at Chipotle. Apparently queso is the most requested thing that's not on the restaurant's menu, according to Eater New York.
The queso – being called Genuine Queso – is only at the test kitchen right now, and a Chipotle spokesperson told Thrillist it will decide later if they'll start serving it at other restaurants, depending on how people like it.
Queso is among the new menu items Chipotle is testing at the kitchen. Other items include frozen strawberry margaritas (both with booze or without), a chipotle pepper chocolate dipping sauce for a dessert that's also on the test menu, and a new salad that's made with avocado-based vinaigrette dressing, Thrillist reports.
Why didn't Chipotle want to serve queso?
Chipotle is all about not adding additives, colors, preservatives, etc. to its food, so that can make making queso a bit difficult.
"Queso has to be made with artificial stabilizers to keep its shiny liquid form. Ever heard of all-natural goopy cheese? Do you think there's a magical cow that squirts queso out of its udders?"
Chipotle CEO Steve Ells was a little more eloquent in his internal memo to employees earlier this week saying: "All of our competitors sell queso, and we know some customers don't come to Chipotle because we don't offer it," adding because they don't use fake stuff in their food, it's been "very difficult" to make queso that meets their standards, Eater reports.
It looks like they've figured it out, though.
