This is Bald Man Brewing – Eagan's first craft brewery


Eagan's first craft brewery officially opens Saturday.

Bald Man Brewing – named after the bald man himself, head brewer Tristan Kushirek – is putting the finishing touches on its brewery and taproom located across Highway 13 from Twin Cities Premium Outlets.

"People will come here to check out what we've built here, and once they taste the quality of our beer they'll be back," Dan Jacobs, the founder and owner of Bald Man, told BringMeTheNews.

But there's a lot of other stuff going on at the brewery too.

Bald Man hopes to fill a void in the southern Twin Cities suburb by creating a neighborhood brewery where people can gather with their families, listen to rock music and drink quality beer, Jacobs explains.

They also plan to have food trucks, live music every weekend, special vinyl nights and other events. That even includes yoga at the brewery on Saturday mornings. (Upcoming events will be posted online here.)

A peek inside

The open taproom has what Jacobs called a north woods feel (the wood that lines the bar is milled near Brainerd), complete with board games for kids and adults, TVs to watch Vikings games, and eventually a dog-friendly patio (which right now is still under construction).

There's just a railing dividing customers from the production area of the brewery – that way people can sip on their beer while looking at where it was made. You can see parts of the facility in the GoNewsMN Snapchat tour embedded above.

The beers

Bald Man will have 10 beers on tap at a time: five flagship beers, three seasonal or reserve beers, and two nitros.

The flagships include Young American Pale Ale (it'll be available early next week); Misty Mountain Hops IPA, Heart of Glass Blondie Ale; Dark Side of the Moon Porter; and Tupelo Honey Brown Ale.

(Notice a trend? The names of the brews are all inspired by rock songs. Their three passions, by the way, are: artisan beer, family and friends, and rock music.)

The honey brown ale is the one Jacobs is most excited for people to try, calling it Kushirek's "soon-to-be-famous beer."

It looks dark, but tastes "super light," Jacobs explains, adding he hasn't met a person who hasn't liked it – and that includes his girlfriend, who he says only drinks Coors Light.

Kushirek, who formally trained with the American Brewers Guild, has a lot of other beers in the works, Jacobs says, including an imperial IPA, a hazelnut porter, a Belgian strong ale and a bourbon barrel porter.

Bald Man's first seasonal – an Oktoberfest – is expected to be on tap by the second or third week of September. Rock Me Like a Hurricane (a song by the only German band they could come up with) will be out just in time for the traditional German festival.

The other beers will come out "as soon as we have the vessels available," Jacobs says, noting the Killer Queen Imperial IPA will be coming "sooner rather than later."

When Bald Man Brewing opens

Bald Man Brewing officially opens at 11 a.m. Saturday. There will be two food trucks, as well as live music that'll start at 8 p.m.
