Fresh bagels are on their way to Duluth as Ursa Minor Brewing prepares to open Bean & Bear Bagels, a new breakfast hub near its taproom.

Bean & Bear Bagels will open this spring in a piece of Ursa Minor’s production facility and offices in Duluth’s Lincoln Park neighborhood, separate from its taproom and pizzeria.

“The thing that really gets us up and going is the idea of craft manufacturing and making beautiful things with real ingredients and giving our community something that they can truly be proud of,” Ben Hugus, founder of Ursa Craft, tells Bring Me The News.

He says Bean & Bear will follow the same ethos as Ursa Minor and its pizzas, avoiding frozen ingredients and sourcing as much locally as possible.

“A lot of our own team end up going to Kwik Trip and garbage fast food because that’s all there is,” Hugus says. “We all lead busy lives, and we were like, ‘We need to change this.'”

The new shop will offer bagels, breakfast sandwiches, cream cheese, and coffee, with a focus on grab-and-go service rather than a sit-down experience.

Its boiled and baked bagels — with four to six flavors available on a rotating basis — will also be available with house-made lox, through a partnership with a couple in Duluth that fishes in Alaska.

With bakers already on the team, going after bagels and breakfast felt like a logical next step, particularly given his love for bagels.

“I’ve made bagels at home forever because you can’t find them,” Hugus continues. “If you ever have had a hot, fresh bagel, I think that’s an experience that nobody gets in Duluth, in the Northland… It’s hard to find.”

Bean & Bear Bagels will open at 202 S 26th Ave. W in late April or early May.
